Seasonal bistronomy in Saumur. Chef Marlon Medina and his team bring the Loire Valley terroir into dialogue with Latin American flavours.
We cook what the Saumur market gives us that very morning, with the memory of a Colombian childhood. Nothing more, nothing imported just to look good.
A cuisine born of a journey
Colombian-born and French-trained, Marlon Medina opened Masama in 2021 on place de la Bilange. He defends an unpretentious bistronomy: short-sourced produce, precise cooking, citrus acidity as a common thread.
Alongside him, Maria welcomes every table. Together they made Masama a place you return to for the cooking as much as for the welcome.
The story of the HouseWhat the house stands by
Three ways to set sail
Served Monday to Friday at lunch. The composition changes weekly, following the market.
In the evening and at weekends, dishes are served à la carte.
The market decides the menu
Saumur market gardeners, small-boat fishing, traceable French meats, Ecuadorian cocoa. What is not in season is not on the menu.
Our commitmentsWhat they remember
The ceviche and the picanha are a real journey. We'll be back.
